My favourite high protein oatmeal recipe made with tofu! Creamy, fluffy and ready in 5 minutes. Vegan, dairy free & egg free.

Ingredients

Units Scale
  • 180g soft tofu
  • 1 cup oatmeal (80g)
  • 1 frozen banana
  • ⅓ cup zucchini, optional
  • pinch of salt
  • 1 scoop vegan protein powder (30g)

Instructions

  1. Blend the soft tofu with 1 cup of water. Add the oatmeal, zucchini and banana to a deep bowl. Pour in the tofu milk and microwave on high for 3 minutes, stirring half way. 
  2. Stir in the protein powder. Add more water if needed and microwave for another 30 seconds to warm it up again (if needed). Add toppings and enjoy!

    Hello Lisa
    I have to admit this is really unexagerated from you to name this recipe the best because it is true ! I halved the quantities for my personnals intakes but this is just perfect. I mean the texture is soft and so good in mouth not soggy not runny. Zucchini adds volume and tofu add this soft taste without compromising anything! Just just 👌

    Will make it again !!
