Description
Bagnut Breakfast Sandwich with soy caramelized onions, togarashi miso mayo, breakfast patty, cheese, fried egg on a bagel-donut. This sweet and savory combination is so extra and so delicious.
Ingredients
Caramelized Onions
- 2 large onions
- 2 tbsp butter
- 2 tbsp oil
- 2 tbsp soy sauce
Miso Mayo
- 4 tbsp Kewpie mayo
- 1–2 tsp miso, to taste
- 1/4 tsp togarashi, to taste
Bagnut Breakfast Sandwich
- 2 breakfast patties of choice
- 2 sliced of cheddar cheese
- 2 bagnuts
- 2 eggs
- 2 thick slices of tomatoes
- 1/2 cup arugula
Instructions
Caramelized Onions
- In a medium pan add butter and oil over high heat. Once butter has melted, add the onions and reduce to medium low heat. Let the onions cook down, stirring occasionally so the bottom doesn’t burn. Add a splash of water as needed to deglaze that pan. Cook until jammy (about 20-25 minutes) to your liking. Stir in the soy sauce and cook for another 5 minutes. Remove from stove and set aside.
Miso Mayo
- Whisk together the Kewpie mayo, miso and togarashi until well combined. Set aside.
Fried Egg
- Add a generous amount of oil to a small pan over high heat. Once hot, crack in the egg, reduce the heat to medium. Spoon the oil over the egg and cook until edges are browned crispy to your liking. Remove from pan and set aside.
- In the same pan, add the breakfast patty and heat on both sides. Add cheddar cheese, cover with a lid and once the cheese melts remove from pan.
Bagnut Sandwich
- Slice the bagnut in half. Spread a generous amount of miso mayo. Add a handful of arugula, followed by the breakfast patty, caramelized onions, tomato and then fried egg. Spread more miso mayo on the top bagnut and then place on top of the egg. Serve and enjoy!
