Happy Monday friends! Monday’s can be a slight struggle, but I have the perfect drink for you to either kick start your morning or as a midday pick-me-up: Vegan Strawberry Matcha Latte– inspired by Boba Guys. I saw this drink a couple years back when visiting Los Angeles. Unfortunately, they didn’t have dairy-free milk but I was really keen on replicating something similar to their drink.

We don’t need any fancy equipment or ingredients to make this delicious special drink! All you’re going to need are:

How to Make Layers in a Matcha Latte

Have you wondered how to make perfect layers in lattes? I did. I thought it would be quite challenging to make each layer distinct from each other but actually, it’s very easy. The key is in the density of each layer!

Strawberry Sauce: First, the strawberry sauce needs to be made. This is the only step that requires a bit of time (but still really only 10 minutes). Thaw frozen strawberries so their juice releases and add in a bit of maple syrup for extra sweetness. Let that simmer for a couple minutes and mash it up with a fork. OR if you’re really lazy, you can nuke it in the microwave for 30 seconds, add the maple syrup and mash the strawberries with a fork and then microwave for another 20-30 seconds (or until syrup-y).

Sweet Milk: The milk needs to have a higher density than the matcha layer so this is essential. Mix together a bit of evaporated coconut milk (or milk of your choice, I always go for coconut or a higher fat milk) with some sweeter like maple syrup or coconut sugar.

Matcha Layer: Whisk some hot water with matcha powder using a Bamboo Matcha Whisk. The best wash to whisk matcha is a back and forth motion in a medium size bowl until you start forming bubbles.

Grass Jelly or Tapioca? This is an optional step, but you can also add in some tapioca pears or grass jelly! I’m team grass jelly and I think it works so well with this drink but if you love tapioca pears, go for it!

Layering: The final step is assembling the drink. A key tip here is to pour the contents slowly so that the layers form. Layer in this order: strawberry sauce, grass jelly, sweet milk, ice & then top it off with the matcha layer.

This vegan strawberry matcha latte recipe is an awesome way to switch up your daily coffee or matcha drink! Use up left over strawberries to make the strawberry sauce in advance and this drink can be ready in minutes. If you haven’t tried grass jelly, I highly recommend it! It has an interesting herbal, yet sweet flavour and love that it gives this drink some body to it 🙂 Plus, this matcha latte is much healthier than store bought because it’s not loaded with sugar, artificial flavourings and food colouring.

Instructions

  • Strawberry Sauce: In a medium sauce pan add the strawberries and 1 tbsp maple syrup over medium heat. Allow it to come to a boil and then reduce the heat to low. Mash the strawberries and simmer for 6-8 minutes or until the liquid reduces in volume. Remove from the heat and let it cool. Place into the fridge once it reaches room temperature.
  • Milk Layer: Whisk together the evaporated coconut milk and 1 tbsp of maple syrup. 
  • Matcha layer: Whisk the matcha with the boiling water with a matcha tea whisk. 
  • Layer the ingredients in this order: 1/4 cup of the strawberry sauce, grass jelly, sweet milk, ice & matcha. 

Notes

  • Microwave Strawberry Sauce: Microwave the strawberries in a deep bowl for 30 seconds. Mash with a fork. Add in 1 tbsp maple syrup and microwave for another 30 seconds or until syrup-y.
  • Substitute grass jelly with tapioca pears if desired.
