These Vegan Apple Rose Tartlets are paired with a hidden layer of almond paste and encased in a crisp flakey crust. Not only does it taste wonderfully delicious, but it’s beautiful too! Vegan & made with just 5 ingredients.

I know, I know it’s not February yet but I couldn’t wait to share these Vegan Apple Rose Tartlets! I absolutely love the combination of juicy sweet apples and the nutty flavour of almonds, especially in baked goods like tarts. They look complicated, but I promise- they’re quite easy to make! Hint hint, valentine’s day is coming up and I think these would be perfect to bring out for dessert! Whether you’re spending it with your partner, with your friends or even by yourself, these pretty lil’ Apple Rose Tarts will for sure fill your heart. Let’s get into it, shall we?

All we need is 5 ingredients: a prebaked tart base, apples, sugar, almond meal and aqua faba.

The pie/tart crust should be blind baked, for around 15 minutes. Simply spread the almond paste on the bottom and then start layering the apple rose petals! If the apple slices don’t curve around the tart, they were either cut too thick or not softened enough.

Wasn’t that easy? And beautiful? When I gave it to my boyfriend to taste test, he looked at it and said: “I don’t even want to eat it cause it’s so pretty” 😂

Tips and Tricks to making Vegan Apple Rose Tartlets

  • When slicing the apples, be sure they are thin. When sliced too thick, they’ll break in half or not create the shape of rose petals

  • To prevent browning of the apples, you could add in 1/2 tbsp of lemon juice with the sugar

  • When creating the rose shape, I like to start on the outside and work my way in. You can watch this video to see how I did it!

Ingredients

  •  1 tart/pie crust recipe (or your favourite recipe) – blind baked for 15 minutes

  • 3/4 c almond meal (100g)

  • 1/2 c sugar (100g)

  • 1.5 tbsp aqua faba

  • optional: almond OR vanilla extract

  • 3 apples

Method

  1. First, thinly slice the applies and place them into a microwave safe dish. Toss with the lemon juice and 1/4 c of the sugar. Microwave covered for 1-2 minutes on high to soften them (read tips & tricks)

  2. To make the almond paste, into a large bowl mix the almond meal, 1/4 c of sugar, aqua faba and almond/vanilla extract until combined

  3. Divide the marzipan into 4 (if making tartlets) and spread the paste using your fingers on the bottom of the tart crust

  4. Once the apples are cool enough to handle, start layering the apple slices into a rose shape (read tips & tricks)

  5. Bake at 350 for 20 minutes
