Sesame strawberry jam focaccia is a sweet and unique twist on the classic Italian bread. This focaccia recipe incorporates the nutty sesame seeds, sweet and fruity flavors of strawberry jam into the savory and chewy texture of focaccia, creating a delicious and versatile style of bread.

My newest obsession: sweet and savory focaccia!! Focaccia is one of my favourite breads to bake because of how simple, easy and da*n good it is. Moist and fluffy with a crusty top, laced with sweet strawberry jam and nuttiness from the sesame oil.

Ingredients

5-6 ingredients is all you need to make this sweet sesame focaccia:

  • bread flour
  • sugar
  • instant yeast
  • strawberry jam
  • sesame oil and/or olive oil: the more sesame oil you use, the stronger the flavour will be.

Instructions

  1. Make dough: Mix: the ingredients of the dough until it comes together. It’s normal for the dough to be very wet and sticky! Rest 30 minutes.
  2. Stretch and fold three times: Wet your hands and stretch the dough from the top of the bowl, pulling it up and then to the other end of the dough (ex. starting at 12 o’clock and then bringing it down to 6 o’clock). Repeat all the way around. Cover and let it rest for 20 minutes and repeat the stretch and fold. Cover and rest another 20 minutes. This time, add jam and perform stretch and fold. Flip so the smooth side is facing up, drizzle with sesame oil and then cover. Refrigerate overnight.
  3. Secondary proof: The next day, line and oil a 8.25 x 6.25 inch baking pan with sesame or olive oil. Remove from the fridge and flip it over into the pan. Bring the top edge down and the bottom edge up, folding it over. Repeat on the other sides and then flip it so the seam side is down. Proof for 1 – 2 hours. The time will highly depend on the temperature of your kitchen.
  4. Toppings: Drizzle with sesame oil and dimple the dough. Plop on small scoops of strawberry jam, aiming in the dimples. Top with sesame seeds and salt. Dimple the dough.
  5. Bake: at 425 F for 18-22 minutes.

Variations

This jam focaccia is simply just a blueprint, you can add any additional toppings or flavours of jam that you love! Here are some of my favourite pairings:

  • Blueberry jam & basil, rosemary or sage
  • Peach jam & basil
  • Raspberry & rosemary, with sesame seeds
  • Citrus jam with pepper or chili flakes

Storage

To keep your strawberry jam focaccia fresh and tasty for as long as possible, it’s important to store it properly. Here are some tips on the best way to store your jam focaccia:

  1. Room Temperature: Store strawberry jam focaccia at room temperature for up to two days. Keep it in an airtight container or wrapped in plastic wrap to prevent it from drying out.
  2. Refrigerator: If you want to keep it longer than two days, it can be kept in the refrigerator. Place it in an airtight container or wrap it tightly in plastic wrap or aluminum foil for up to a week.
  3. Freezer: Wrap it tightly with plastic wrap and place it in an airtight container or freezer bag. It can be stored in the freezer for up to three months.

When you’re ready to eat your strawberry jam focaccia, you can thaw it at room temperature and then reheat it in the oven at 375 for 6-6 minutes or until the top is crispy again.

Top tip

Try not to knead the jam into the dough too much for a lacy jam effect. Most of the stretch and folding for building strength of the dough should be done in the first and second stretch and fold. Additionally, aim to add the jam in the dimples to prevent the bread from burning too much (from the sugars).

FAQ

Can I double this jam focaccia?

Yes! Double the recipe and bake in a 9 x 12 or 9 x 13 inch baking pan. Baking time will be the same.

Ingredients

  • 208 g bread flour
  • 175 ml water
  • 1/2 tbsp (7 ml) sesame oil
  • 1/2 tsp (2 g) sugar
  • 1/2 tsp (1.6) g yeast
  • 5 tbsp strawberry jam, divided
  • 1 tbsp olive oil, divided
  • 1 1/2 tbsp sesame oil
  • sesame seeds, for topping
  • flaky salt, for topping

Instructions

  1. Prepare dough: To a medium bowl, add the water and yeast. Swirl the bowl and then add in the sugar and sesame oil, and stir. Add the flour and salt and mix with a wooden or firm spatula until it comes together. The dough will be very wet and shaggy. Cover and rest for 30 minutes.
  2. Stretch and fold: Wet your hands and stretch the dough from the top of the bowl, pulling it up and then to the other end of the dough (ex. starting at 12 o’clock and then bringing it down to 6 o’clock). Repeat all the way around. Cover and let it rest for 20 minutes and repeat the stretch and fold. Cover and rest another 20 minutes. This time, dallop 2 tbsp of the strawberry jam over the dough. Fold and stretch. Flip the dough so that it is smooth side up. Drizzle with 1/2 tbsp olive oil, cover and refrigerate overnight. 
  3. Next day: Line and oil a 8.25 x 6.25 inch baking pan with the other 1/2 tbsp of olive oil. Remove from the fridge and flip it over into the pan. Bring the top edge down and the bottom edge up, folding it over. Flip dough seam side down. 
  4. Proof for 1 – 1 1/2 hours. The time will highly depend on the temperature of your kitchen.
  5. Pre-heat the oven to 425 F. 
  6. Drizzle with sesame oil and dimple the dough.  Add the remaining strawberry jam and aim to push the jam into the dimples. Top with sesame seeds and flaky salt. Bake for 18-22 minutes (mine is always perfect at 20 minutes). 
  7. Transfer to a wire rack and let it cool for 20 minutes before slicing. Enjoy!!
