Miso Garlic Butter Focaccia with Mushrooms and Scallions

Description
Crispy, fluffy and chewy focaccia bread topped with mushrooms, scallions and garlic. Brushed generously with miso garlic butter… a slice of heaven. This no knead small batch focaccia is a must try!
Ingredients
Focaccia
- 324g bread flour
- 5g instant yeast
- 6g salt
- 285ml water
- 1/4 cup olive oil, divided
- 1 scallion, sliced
- 2–3 oyster mushrooms, sliced
- 6–8 cloves of sliced of roasted garlic (I used my miso braised garlic)
Miso Garlic Butter
- 4 tbsp vegan butter (60g)
- 2 tbsp miso paste (40g)
- 1 – 1 1/2 tbsp maple syrup (20ml)
- 4–6 garlic cloves, minced (25g)
- Flaky salt, optional
Instructions
- Night before: In a large bowl, add flour, salt and instant yeast and whisk together. Then pour in the water and mix with a spatula or wooden spoon until a wet and sticky shaggy dough ball forms. A wet dough will result in a fluffier focaccia. Add 1 tbsp of olive oil on top and rub the surface to coat. Cover the bowl with a slightly damp tea towel and then place into the refrigerator overnight (12-15 hours).
- Following day: The dough should still be wet and increased in size. Grease or line a 11 x 8 inch pan. Add one tablespoon of olive oil to the pan. Rub some olive oil onto your fingers and then pull the sides of the dough towards the middle, rotating the bowl until all sides are pulled in. Transfer to prepared baking pan and flip it once to ensure the entire ball of dough is coated in olive oil. Let the dough rest for at least 2 1/2 – 4 hours or until the dough has spread close to the edges of the pan (it should look double in size).
- In the meantime, make the miso garlic butter. Add butter to a pan over medium high heat. Once belted, add minced garlic and cook until fragrant. Turn off and remove from heat and strain the butter to separate the garlic. Whisk in the miso paste and maple syrup. Taste and adjust amount of miso paste and maple syrup to desired taste.
- Slice the oyster mushrooms 2mm (1/8 inch) thick. Slice scallions 2 inch in length.
- Preheat oven to 425 F. Drizzle one tbsp of oil on the dough and lightly coat fingers in oil again. Dimple the dough using your fingers by pressing them close to the bottom of the pan (but not all the way through). Allow the bubbles to form (don’t pop them!).
- (Optional: Sprinkle flakey salt on top (not too much because the butter is salted)). Place desired amount of sliced mushrooms on the dough. Press scallions into the dough between oyster mushrooms. If using braised miso garlic, spread and press those in as well. Drizzle with one more tablespoon of oil on top.
- Place into middle rack of your oven and bake for 20-22 minutes or until surface is crisp and deep golden. Transfer the focaccia to a cooling rack. Generously brush the miso garlic butter on top. Allow it to cool for 15 minutes before slicing and serving.

This is my first time making focaccia and I’m hooked. Never even made bread before and this was very easy to follow. I’ve made this twice already it’s soo good!! The second time I used shallots and button mushrooms, but I’ll definitely go back to Lisa’s OG recipe. Can’t wait to try more 😋

This focaccia is AMAZING. It is a little thicker than others I’ve made but the crunch on the crust and the airy insides make this a lovely bread to slice in half for sandwiches. The miso-garlic-butter is so good. The only alteration I made was to use golden syrup instead of maple (I didn’t have). To enhance the flavors of the miso-garlic, I made a sandwich filling of miso chicken, ginger mayo and sprouts….so so good!!!

This recipe is DELISH. Full disclosure I proved my dough for 1.5 hours at room temp and then again for about 30 minutes after it was in the pan. It was not as beautiful and airy as if you were follow the recipe but it still tasted amazing!

My favorite recipe on this blog to date. The miso maple butter sends it home and the mushrooms add the nicest texture. The focaccia is easy, delicious, and bakes beautifully. I’ve made this many times now both for myself, and entertaining and it is a crowd pleaser. I’ve been experimenting with proofing times and find that the final product is delicious when proofed 1 hour, 12 hours, or anytime in between. This will be a recipe I make for the rest of my life.

This was such an easy recipe to prep and make. I let my bread do the second proof in the oven with the light on and it spread out so quickly. The final, baked flavor and texture of the bread is amazing and addictive. The outside is so crunchy, while the inside is soft and airy. When I make it, it never last past that day. My husband and I find any excuse to enter the kitchen and steal a slice. This is by far my favorite focaccia recipe.

Very yummyliscious and super easy to make. 13/10 points. The miso garlic butter is unreal and I could swim in it. The focaccia itself was crunchy on the outside and soft inside. I ate the whole thing in one evening. Totally easy and yummy
I feel like the payoff for this recipe is phenomenal: it’s delicious, not difficult to make, and looks incredible too. Mine turned out a little flatter than expected, but I think it’s because I used a pan that was too large and the dough spread out thinner that it was supposed to. The miso butter is also incredible!

This recipe was soooo good! I brought the focaccia over to my parent’s house while it was still warm and my dad went in for another piece! He’s my harshest critic so for him to go back for seconds was a huge compliment. The only thing I wish is that I didn’t have to let it rest for 12 hours, then another 4 hours. But the fluffiness and crunch was worth it in the end. Overall this is a great recipe and easy to make. I can’t wait to make this more during the holidays with different toppings – YUM!!

The texture is glorious! My new favourite focaccia recipe. I did half left over caramelised onion and pear from a pizza night and the other with the miso butter. Worked well with both but I made the mistake of including some of the miso chunks and that got a bit burnt 😅 would for sure make again, so easy too!

MAKE THIS! The recipe is easy and versatile! I’ve made it twice now and everyone has loved it. The salty, slightly sweet butter topping just takes it over the edge. For the 2nd round I substituted a mixture of mushrooms that I had and they looked so pretty! Just make sure they’re super thin. Yum this is my new secret weapon when cooking for guests!

My first attempt at baking and so glad I did it with Okonomi Kitchen’s recipe! My long distance friend and I decided to do a facetime baking session and it ended up being the most perfect friend date I could’ve asked for. My focaccia came out a little less fluffy than I would have hoped, but I also did notice that my dough wasn’t that wet before putting it in the fridge (so more of a mental note for myself next time!) It was still SUPER delicious though and I will definitely be making this again soon because I went through my first loaf waaaay too quickly. Thank you Lisa!! <3

This was easily the best bread I’ve eaten in my life! The recipe is so fool proof, easy and with just a handful of ingredients! I think the miso garlic butter focaccia is even better than anything that’s store bought because of the unique combination of flavours, and what’s better is it can be made vegan so easily! The mushrooms, roasted garlic and spring onion give the bread a unique flavour but the miso garlic butter just takes it to the next level. I was in savoury heaven and can’t wait to make it again!!! Miso pairs so perfectly with the oyster mushrooms and the scallions! I couldn’t help but notice something from people’s IG stories, though, so I’m just going to leave this here: don’t be afraid to let the focaccia sit in the oven for longer than what the recipe says. My (somewhat larger) focaccia took about 30 minutes to fully cook and brown to my liking. I also suggest melting more butter, or cutting down on miso – I measured everything out with a scale, and the initial result was more like a watery miso paste than butter.

Made this with a friend virtually for a dinner and it was AMAZING. Like actually the best focaccia I’ve ever made, and it was super easy & required very minimal prep the night before. My dough was soft and airy. Baking time for me took about 30m before it was golden brown! *Also i misread the instructions and used roasted garlic for my butter sauce but it came out amazing anyway. I’m not vegan so i had no vegan butter on hand but it was good w dairy butter & honey (in lieu of maple syrup). Will be making this again soon!
Insanely good. that miso butter is money ~ i left the garlic in there as well! let it cook a bit and spread it on top of the focaccia because we are big garlic lovers in my house! I added serranos to give it a nice spice and it was omfg kinda incredible!

I *LOVED* this recipe; ya girl loves an easy, no-knead bread recipe, and the miso garlic butter with mushrooms? *Chef’s kiss* I ate at least half of the bread myself today.
Who can resist a crispy focaccia with Asian flavors?? I did change it a bit with whole wheat flour and shimeji mushrooms, but the recipe is so easy to follow and very adaptable. I am also trying to slowly shift towards vegan options (and get the rest of the family to make small changes with it), and they didn’t know it was vegan at all! I will most definitely be using the leftover miso garlic butter for many other things as well!
A couple of notes:
-I used a pan that was too wide, so I tried to stretch my bread to fit the pan (which just resulted in a thinner focaccia bread) Watch out for the timing if that’s the case!
-I also got greedy and put A LOT of shimeji mushrooms (maybe a little too much). Follow Lisa’s recipe for the amounts.

I love how this was like an asian western fusion as it blended the traditional Italian bread base with yummy Japanese flavours. I subbed the bread flour for whole wheat and it turned out just as yum with a crispy outside and soft inside. I also left the garlic rather than strained it because I like lotsa garlic in general.

I added more 50 to 100ml water because of my dough was dense. Probably I added too much flour BUT I CAN BAKE YUMMY FOCACCIA!!!!!!
And I used leftover garlic miso butter for vegan pork bowl. It was goooood too!

I didn’t have all the same ingredients (used chives instead of scallions, used whole grain flour), but this turned out great! It was so easy to make compared to other kinds of bread and THAT MISO GARLIC BUTTER IS INCREDIBLE. I’m going to be making that to go with loads of other recipes now!
