A Classic Japanese Way to Eat Strawberries

Strawberries coated in condensed milk is like the Japanese version of chocolate coveredd strawberries?

When I visited japan during the summer, strawberries are actually not at its peak season so they can be a little less sweet so we would drizzle some condensed milk voer them and this was one of my favourite desserts.

this pairing is also very common in other dersserts like pastries, purin (japanese pudding), kakigori, cakes and more.

Why Add Condensed Milk to Strawberries

Strawberries are already packed with nutrients. They’re low in calories and one of the highest vitamin C fruits, along with being rich in antioxidants and polyphenols.

What many people don’t realize is that some of these beneficial compounds are fat-soluble, which means pairing strawberries with a source of fat can help your body absorb them more effectively. So what does this mean?

  • Strawberry polyphenols absorb better with fat
  • Dairy can increase absorption by 2–3×
  • You get more antioxidant benefits from the same serving

So while condensed milk adds sweetness and creaminess, it is also possible that it can help your body make better use of the nutrients strawberries already contain.

How to Wash Strawberries

Washing strawberries properly helps them stay fresh longer and prevents them from becoming watery.

  1. Rinse under cold running water.
  2. Gently rub the surface to remove dirt.
  3. Drain in a colander.
  4. Pat completely dry with a clean towel.
  5. Remove stems after washing to prevent water from entering the fruit.

Dry strawberries hold the condensed milk better and keep the flavor from becoming diluted.

Lisa’s Recipe Tips

  1. Wash gently, don’t soak! Strawberries are like little sponges. Soaking them can make them waterlogged and dilute their flavor. A quick rinse under cold running water is enough to remove dirt.
  2. Dry them throughly: This step matters more than it seems. Excess moisture prevents the condensed milk from clinging to the fruit and can make the dessert taste diluted. After rinsing, spread the strawberries on a towel and pat them dry.
  3. Hull after washing, not before: Removing the stems before washing allows water to seep inside the berries, which affects both texture and shelf life. Keep the stems on until they’re clean and dry.
  4. Serve them cold: Cold strawberries taste sweeter and more refreshing. If you have time, refrigerate them for at least 30 minutes before serving.

Serving Suggestions

I usually serve strawberries with condensed milk straight from the fridge, with the condensed milk drizzled right before eating so it stays thick and doesn’t slide off the fruit. But this combination can be used in so many other ways! Here are some of my favourites:

  • Spoon it over pancakes or waffles and let the condensed milk melt in
  • Add it to a bowl of plain yogurt for a quick breakfast
  • Pile it onto shaved ice in the summer (kakigori)
  • Layer with granola and whipped cream for a simple parfait
  • Serve with roll cake, chiffon cake or sponge cake
  • Add a scoop of vanilla ice cream

Fully dried strawberries can be stored in an airtight container in the refrigerator for 1–2 days. For best flavor and texture, enjoy them the same day.
