Easy Miso Ramen (5 Minutes!)

Ingredients

Miso Ramen Soup Base

  • 1 tbsp vegan mentsuyu (Japanese noodle soup base)*
  • 1 1/2 tbsp miso paste
  • 2 tsp mushroom stock powder
  • 1 tsp sugar
  • 1/2 tsp doubanjiang (optional)
  • 1 tsp sesame oil
  • 1 tsp chili oil
  • 1 garlic clove, minced
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 1/2 tbsp sesame seeds
  • 350400ml water

For the Ramen

  • 1 serving ramen noodles of choice
  • 4 pieces tofu karaage (or protein of choice)

Toppings

  • scallions
  • corn
  • vegan butter
  • sesame seeds
  • bamboo shoots
  • kimchi

Instructions

  1. Add all the miso ramen soup base ingredients to a bowl and whisk until well combined. If you have a miso muddler, dissolve it in after you add water to ensure there are no clumps. 
  2. Cook the noodles following package directions. Drop it into the soup and top with karaage.
  3. Add additional toppings and choice. Slurp and enjoy!

  1. The best Ramen recipe I’ve done ever!!! My picky kids and hubby love it so much!!!!! I’m from Japan so I’ve eten a lot of Ramen but still this taste so yummy❤❤❤






  2. This recipe is SO good. I had everything in my pantry and this was so much more satisfying and delicious compared to instant noodles. Added TVP instead of tofu karaage 🙂






  3. I actually had all of the ingredients except mentsuyu but it worked well to just substitute some soy sauce in. This was quick to whip up and soooo tasty. It felt like I had ordered this in a restaurant. For toppings I braised some baby bok choy in soysauce and topped with green onions. I can’t wait to try it again!!
