TRIPLE BERRY BAKED OATMEAL WITH ALMOND MAPLE CRUMBLE (Vegan)

Ingredients

Triple Berry Jam

1 c. frozen triple berry blend

1 tablespoon chia seds

1 tablespoon maple syrup

1 tablespoon lemon juice

½ teaspoon vanilla extract

Oatmeal Bake

1 c oats

½ c oat flour

½ c almond meal

1 tablespoon sugar (coconut and maple sugar are amazing!)

½ teaspoon baking powder

2 tablespoon maple syrup

1 teaspoon vanilla extract

1 small banana (around 80g), pureed/mashed

Method:

  1. Pre-heat oven to 350 c
  2. Mix ingredients for berries and place in fridge
  3. Mix all dry ingredients together and then wet ingredients EXCEPT the banana
  4. Portion ¼ of the mixture and set aside
  5. Mix in the banana to the bowl with ¾ of the mixture
  6. Bake in oven for 10 minutes
  7. Take it out of the oven, spread the jam and crumble the remaining ¼ of the base mixture on top
  8. Bake for another 20 minutes or until top is slightly golden and crispy
