Triple Berry Jam

1 c. frozen triple berry blend

1 tbsp chia seds

1 tbsp maple syrup

1 tbsp lemon juice

1/2 tsp vanilla extract

Oatmeal Bake

1 c oats

1/2 c oat flour

1/2 c almond meal

1 tbsp sugar (coconut and maple sugar are amazing!)

1/2 tsp baking powder

2 tbsp maple syrup

1 tsp vanilla extract

1 small banana (around 80g), pureed/mashed

Method:

  1. Pre-heat oven to 350 c
  2. Mix ingredients for berries and place in fridge
  3. Mix all dry ingredients together and then wet ingredients EXCEPT the banana
  4. Portion 1/4 of the mixture and set aside
  5. Mix in the banana to the bowl with 3/4 of the mixture
  6. Bake in oven for 10 minutes
  7. Take it out of the oven, spread the jam and crumble the remaining 1/4 of the base mixture on top
  8. Bake for another 20 minutes or until top is slightly golden and crispy
