Quick udon noodles have been my go-to lunch or weeknight meal since my university student days– I have a whole note book of them for anytime I came up with a new yummy combination. Udon noodles are just so quick, easy and customizable based on whatever I have on hand! You guys requested more 'just mix' noodle recipes so today I'm sharing one that actually inspired my kimchi 'feta pasta' and misozuke 'pasta' where I added kimchi and used udon noodles instead.

The combination of chewy thick udon noodles and a cheesy, creamy, spicy sauce is just pure deliciousness and unlike the two 'feta pasta' inspired dishes, this one comes together in just 5 minutes. Plus, you only need five simple basic ingredients to make it! Let's get to it! 😋

How to Make Cheesy Kimchi Noodles

The Ingredients (+Substituions)

  • Udon Noodles: You guys know I love and always recommend either fresh or frozen udon noodles but feel free to use whatever you have on hand! You can even make these with other kind of noodles like ramen or pasta. If using other noodles, cook them first and then simply just mix in the remaining ingredients.
  • Kimchi: I use my homemade vegan kimchi.
  • Cheese: Use your favourite cheese of choice! I use my melty mozzarella cheese or Daiya shreds.
  • Corn: For extra texture and a bit of sweetness. Add other vegetables if you'd like!
  • Vegan Kewpie Mayo: Or regular mayo with a touch of sugar. You can even substitute with vegan butter for a bit of a different flavour.

Want it more spicy? Add some gochugaru or gochujang for an extra kick!

Once you've gathered your ingredients, all you have to do is cook the udon noodles (I use the microwave) and then mix everything else together until the cheese melts. So quick, so easy and so damn delicious–– this is one to keep in your back pocket 😉.

This was way too tasty for something so easy! I’ve made it twice this week and added enoki mushrooms and vegan bacon crumbles instead of corn and it was amazing. Thank you for this recipe!

Made this recipe for the first time the other night and have made it again this evening. It's so comforting and delicious! I omitted the kewpie as I was using a vegan cheese sauce and tried it with edamame instead of corn which was also delish!

I might be biased on this one, since kimchi udon in any form is a surefire way to my heart, but this was completely delicious! My partner ran across the recipe on Instagram and IMMEDIATELY prepared it for me. It took literally 5 minutes. I will be insisting that he make it to pack in my lunch at least three times a week from now until eternity. Five stars, everyone should eat this.

I made this recipe after I saw it on Lisa's Instagram, it is definitely outside of my typical dinner but I was SO impressed!
It took less than 5 minutes to make and was the perfect blend of sour, salty and creamy.
Perfect if you want a quick dinner that feels indulgent.
    Thank you Lisa!

This was so easy to make for such a great end result! I used butter Bc I didn’t have Mayo, and made it spicy. So yummy! I have avoided udon for a while because bigger noodles sometimes weird me out, but I’m glad I gave them another shot.

I made this my mom and it took me less than 5 minutes! She really enjoyed it and the udon captured all the flavor too. Which is something we find difficult to do with udon.

I didn't eat any kimchi until now and still need to get accustomed to the taste, but it was really creamy and tasted good.
The fact, that it only takes 5 minutes and simple ingredients is the biggest ++++ !

I adapted this recipe by adding sriracha and cayenne in place of the kimchi (just working with what I had in the house 😅) and it was SO GOOD! Such a simple recipe, quick to make, but great comfort food. It got the seal of approval from my husband too 🤗

This is one of those dishes where the more you eat it, the better and better it gets. It's also a perfect lunch to pack when you don't have time or are unsure of what you want. It satisfies the cheesy and spicy cravings. Plus! The kimchi definitely offsets the heaviness of the cheese. Just lovely 😚👌

Literally my go-to quick lunch when I’m home; kimchi and cheese is the best pair! I usually use Violife feta for the cheese which works perfectly

Always down for quick meals with kimchi could have been better if my homemade kimchi had more of a kick to it or made by korean people
