Sweet and gooey apples are stuffed into a soft, fluffy cinnamon roll, and drizzled with a homemade caramel. A sweet and delicious vegan dessert to bring to any holiday party!

Apple pie and cinnamon rolls are a popular dessert during the holidays, so why not combine to the two? These rolls are so fluffy and oozing with sweet juicy apples. And to make it even more epic, it’s glazed with a homemade caramel that is ooey gooey and falls apart in your mouth right when you bite into it! The addition of the toasted pecans also adds in some texture and gives a nice balance to cut the sweetness.

I know making your own bread and rolls seems intimidating and a lot of work, but it really isn’t… just a lot of waiting time! I used a bread machine to knead the dough but you can easily do it with your hands. Combine the dough and roll it into a ball. Cover it, and let it rise until it has doubled in size. While I’m waiting for the dough, I like to get going on the apples, measure out the rest of the ingredients and begin making my caramel sauce. If your not up to making your own caramel sauce, you can definitely use a pre-made one! Once it’s out of the oven, drizzle it with the caramel sauce and toss on some more pecans. You COULD wait for it to cool down but I think baked goods- especially breads should always be eaten fresh 😉 If you’re bringing it with you to a party, you can heat it up in the oven on a low temperature or heat it up for a few seconds in the microwave.

Tips and Tricks to making Vegan Caramel Apple Cinnamon Rolls

  • If using your hands to knead the dough, mix the yeast with a little water first
  • When adding in the salt, make sure it doesn’t touch the yeast and it disturbs the rising process
  • After nuking the apples, it might be quite juicy. You would take out some of the juice, but it will yield a less moist stuffing
  • When spreading the ingredients onto the rolls, focus most of the stuffing towards you so that you when roll it up, the stuffings don’t fall out
  • When cutting the rolls into 6 pieces, I find cutting the ends slightly larger helps achieve an even side among the rolls

Vegan Caramel Apple Cinnamon Rolls

Description

Sweet and gooey apples are stuffed into a soft, fluffy cinnamon roll, and drizzled with a homemade caramel. A sweet and delicious vegan dessert to bring to any holiday party!


Ingredients

Units Scale

Bread rolls:

  • 2 1/2 bread flour (300g)
  • 3 tbsp sugar (g)
  • 3 tbsp vegan butter (45g)
  • 1.5 tsp bread yeast
  • pinch of salt
  • 3/4 cup soy milk (180-200g)

Apple filling:

  • 3 small apples (300g)
  • 2 tbsp lemon juice
  • 1/3 cup pecan (80g)
  • 2 tsp cinnamon (10g), divided
  • 1/4 cup brown sugar or coconut sugar (50g)

Caramel:

  • 1 cup coconut cream (200 ml)
  • 1/2 cup coconut sugar (65g)
  • 2 tbsp. corn starch
  • 1/4 tsp pink salt
  • 1/2 tsp vanilla

Instructions

  1. Into your bread maker add in the bread ingredients and let it knead for the given time. For the soy milk, add lesser amount first (180ml) and watch to see if it combines. If it looks dry, add in a little more milk. (If doing by hand, knead the dough until combined, cover and let it rise until doubled in size)
  2. In the meantime, peel and cut your apples. Mix in 1 tsp of cinnamon and lemon juice. Nuke in the microwave for 6 minutes and allow it to cool.
  3. For the caramel sauce (OPTIONAL, you can use store bought too!): On medium high heat, in a small sauce pan add in the coconut sugar and stir. Then add in the coconut cream or milk, and whisk until it starts to lightly simmer. Add in the salt and vanilla and let it simmer for 3-4 minutes, then add in the corn starch and stir for 1 minute. Remove from the heat and let it cool.
  4. Once the bread has risen, flour your working surface. Punch the bread dough down and knead it with your hands for a couple of minutes. Roll it out into a rectangle and sprinkle on the sugar, cinnamon and pecan evenly. Then add on the cooked apples. Roll it up tightly and cut into 6 pieces. Place them into a 7×11 inch pan, cover and let it rise until 1.5 in size (around 20-30 minutes)
  5. Pre-heat your oven to 180C (350F). Once the bread has risen, place into the oven for 20 minutes, rotating the tray half way.
  6. Drizzle on the caramel sauce and sprinkle more crushed pecans before serving.
