Vegan Chocolate Cake made with Eggplant

  • 2 eggplants, steamed (300g raw)
  • 1/3 cup semi-sweet chocolate chips
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp vinegar (ACV or balsamic)
  • 2/3 cup cacao powder (58g)
  • 2/3 cup cake flour OR all purpose gluten free flour blend (80g)
  • 1/4 cup almond flour (30g)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 chia egg (1 tbsp ground chia seeds 2 tbsp water)
  • 1/2 tsp salt


  1. Preheat oven to 350F.
  2. Chop the eggplant and steam until tender (around 5 minutes)
  3. In a large bowl, sift and mix in the cacao powder, cake flour, almond flour, baking powder, baking soda and salt
  4. In a blender, add in the cooked eggplant, chocolate chips, maple syrup, vanilla and vinegar and blend until smooth
  5. Pour mixture into the bowl with the dry ingredients and mix
  6. Half way through, add in the chia egg and fold to mix
  7. Divide the batter into 6 large greased muffin tins*
  8. Place into oven for 30 minutes rotating half way or until toothpick comes out clean
  9. Serve with chocolate frosting (or your favourite frosting recipe)!
