Matcha Mochi Waffles

  • 1.5 c glutinous rice flour
  • 1/4 c gluten free flour
  • 3 tbsp coconut sugar
  • 1 tbsp matcha
  • 1 tsp baking powder
  • 1 c coconut milk + 1 tbsp lemon juice
  • 2 tbsp coconut yogurt or cream
  • 1 tsp vanilla extract


  1. Start by making the buttermilk by mixing together the coconut milk and lemon juice
  2. Sift all the dry ingredients into a large bowl
  3. Then add in the wet ingredients and mix to combine (using your hands might be easier for this, the dough should not be runny)
  4. Once it’s mixed, divide the batter dough into 8 and place them into your waffle maker on medium heat for 3-5 minutes
  5. Serve immediately with fruit, yogurt, whip cream or red bean paste!
