Description
Warming apple spiced steel cut baked oatmeal with maple cashew cream! The perfect quick and easy cozy breakfast for the autumn season. Vegan & gluten free.

Apples
- 1 tsp coconut oil or vegan butter
- 1 large apple (220g)
- 1/3 cup chopped walnuts (50g)
- 1/2 apple pie spice
- 2 tsp maple syrup (10g)
Baked Oatmeal
- 1 flax egg (1 tbsp flax meal + 2 1/2 tbsp water mixed together)
- 2 tbsp almond butter (32g)
- 1/4 cup maple syrup (80g)
- 2/3 cup apple sauce (160g)
- 2 cups non dairy milk (500ml)
- 2 tsp vanilla extract (10g)
- 1 1/4 cup steel cut oatmeal (160g)
- 1 tsp baking powder (5g)
- 1 1/2 tsp apple pie spice
- 1/4 tsp salt
Toppings
- maple vanilla cream
- chopped nuts or seeds
- maple syrup
- fresh or dried fruit
Instructions
- Preheat oven 375 F. Grease 8×8 inch baking dish.
- For the apples: Chop into dice sized pieces or thinly slice them lengthwise. I like to do a combination of both for different textures. Heat a pan over medium and add coconut oil. Once melted, stir in the apples, nuts and apple pie spice and sauté for 2-3 minutes or until apples have softened. Stir in the maple syrup and cook for another 45 seconds – 1 minute. Remove from heat and set aside.
- For the baked oats: Add all the wet ingredients into the prepared baking dish and whisk together until smooth. Then add in the oats, baking powder, apple pie spice and salt. Stir in the apple mixture. Bake for 50-55 minutes or until the top is golden brown and there is no more liquid on the surface.
- Plate, drizzle with maple cream, add any additional toppings and enjoy!
